10 Air Fryer Mistakes to Avoid for Crispier, Safer Cooking

1. Overcrowding the basket

An air fryer works by moving hot air around the food. If the basket is packed, the air cannot reach every surface, and you get pale, soft food. Cook in a single layer with a little space between pieces. If you have a lot to cook, work in batches. Two crisp batches beat one soggy one.

2. Skipping the preheat

You do not always need to preheat, but about three minutes helps. The food starts cooking at the right temperature and browns better, and cooking times match the converter more closely. It matters most for frozen foods and things you want crisp.

3. Cooking wet food

Water turns to steam, and steam prevents crisping. Pat chicken, potatoes and vegetables dry before cooking. Wet batters are a problem too, because they run through the basket before they set. Use a dry coating such as breadcrumbs, or a pre-set frozen product.

4. Using too much oil, or the wrong kind

A thin film of oil helps with browning and flavour, but more is not better. Too much oil can drip and smoke. Many manufacturers also advise against aerosol cooking sprays, because the propellants and additives can damage the non-stick coating. Check your manual. A small pump bottle or a brush is a safer way to apply oil.

5. Ignoring the cooking time conversion

6. Not shaking or flipping

Hot air hits the top of the food hardest. If you do not shake the basket or flip the food halfway, one side stays pale. Shake chips and small pieces, and turn larger pieces such as chicken and fish.

7. Blocking the airflow

Parchment and foil are fine if they are the right shape and held down by food, but a loose sheet can fly up into the heating element. Use perforated liners made for air fryers, and never preheat with an empty liner inside. Do not cover the whole basket, or the air cannot move.

8. Judging doneness by colour

Brown does not mean cooked. Poultry should reach 74 °C (165 °F), according to the US Department of Agriculture, ground beef 71 °C (160 °F), and fish 63 °C (145 °F). 9. Not cleaning it

Grease and crumbs build up in the basket and under the heating element. They smoke, smell and can affect flavour. Wipe the basket after each use, wash it with warm soapy water, and clean the inside of the machine according to the manual. Make sure the machine is unplugged and cool before cleaning.

10. Placing it badly

An air fryer needs space around it. Leave room at the back and sides, keep it away from the wall, and do not use it directly under a cabinet where steam can build up. Use it on a stable, heat-resistant surface. Follow the manufacturer's clearance instructions.

Air fryers are best for foods that benefit from dry, circulating heat: wings, potatoes, vegetables and frozen snacks. They are less suited to wet batters, large roasts and delicate leafy greens.
